Every Tuesday night, for the last year, I’ve had grad school class. This is wonderful, except for the fact that I miss Taco Tuesday every week! For me, love comes in the form of tacos and missing Taco Tuesday is a big deal. Luckily, I have the best of friends who are willing to adjust and combine tacos, birthdays, and the first Vikings game on a Monday night – three of my favorite things in life!
We decided to go all out with the fixings, chips and guacamole, and orange fizzy margaritas. It was quite the celebration! One fun fact that you might not know about me is that I rarely follow recipes. It’s actually quite shocking, because in all other aspects of life I typically play by the rules and never deviate. For cooking, however, I like the adventure of trying new things. I mean, what is the worst that could happen?
For the orange fizzy margaritas, I threw together fresh squeezed orange and lime juice with a base of my favorite liquors. I topped them off with a little Perrier for some fun fizz. These are so easy to make, especially because you can adjust how much of everything you want. I love mine extra sour, so I added more orange and lime to my portion. Jake likes his more fizzy, so I added more Perrier to his glass. If you have the right base for liquors, it is hard to go wrong! I personally prefer Agavero Orange and Gran Centenario Tequila from ReserveBar.com. They aren’t too strong and have delicious, bold flavors to add to any drink.
No matter what day Taco Tuesday lands on, tacos, drinks, friends and football will always be significant to me. Everything is worth celebrating, right?
